Simmered Collard Greens
2 lbs collard greens, cut in 2 inch pieces
8 slices bacon, sliced into 1 inch pieces
1 onion, chopped
3 gloves garlic, chopped
1 tsp salt
1 tsp pepper
1/2 tsp sugar
1 tsp red pepper flakes
4 cups chicken broth
- Cook bacon in a large pot over medium-high heat until crisp. Add chopped onion and garlic to pot and cook about 5 minutes.
- Add collards to pan and cook for a few minutes, until they start to wilt. Pour in the chicken broth and add the salt, pepper, sugar, and red pepper flakes.
- Reduce heat to low and simmer for at least an hour, until greens are tender. I prefer to simmer longer.
