Roasted Carrots and Brussel Sprouts

Carrots
Brussel sprouts
Olive oil
Salt and pepper

  • Preheat oven to 400 degrees.
  • Peel carrots and cut into two inch pieces.  Cut bottoms off of Brussels and peel any yellow leaves off.
  • Place vegetables in large bowl and shake with the oil, salt, and pepper until well coated.
  • Roast in oven for about 30 to 35 minutes.  Enjoy as a snack or with a yummy meal!
