Lobster and Bacon Pasta Sauce with Saffron

I was at the local grocery store shopping for dinner and came across a deal I couldn’t pass up.  I found a small, cooked lobster reduced to $3.50.  I had to buy it and did some searching.  I wanted to make a creamy sauce for pasta and found just the right recipe.  The original recipe can be viewed here.  I used what I had available to me and this is what I did:

Lobster and Bacon Pasta Sauce with Basil Linguine
  • 1 cooked lobster, meat removed and save the shells
  • 6 slices of bacon, cut in 1/2 pieces
  • 1 tbsp. butter
  • 1 tbsp. olive oil
  • 3 cloves garlic, minced
  • 16 oz. heavy whipping cream
  • 5 chives, minced
  • pinch of saffron threads
  • salt and pepper to taste
  • 3 tbsp. red wine
  • basil linguine, cooked
  1. •Cook the bacon and then drain. Set it aside.
  2. •Heat the olive oil and butter over medium heat and add the chopped garlic. Sauté for a few minutes.
  3. •Add the cream, chives, saffron, red wine, and lobster shells and simmer over low heat for about 30 minutes. Season with salt and pepper to your tastes.
  4. •Remove the lobster shells and check the seasoning.
  5. •Add the chopped lobster meat and chopped bacon to the sauce and heat it just long enough to warm up the lobster meat, about 5 minutes.
  6. •Add cooked pasta with a tablespoon or two of pasta water (add more if the sauce is too thick), toss the pasta in the pan to fully coat it.
  7. •Serve a nest of pasta topped with the chunks of lobster meat.
