				<content:encoded><![CDATA[<p>When I made this shrimp scampi dish, I used too much lemon juice.  I now own a nice little lemon juicer that has a measuring cup attached to it.  Next time I make this I will also probably double the amount of sauce I make.  Other than too much lemon, the flavor was really good.  The shrimp turned out great!</p>

<h1><span style="text-decoration: underline;"><em><strong>Shrimp</strong></em><strong> Scampi</strong></span><strong></strong></h1>
<p>1 1/2 pound raw jumbo shrimp, shelled and deveined<br />
salt and ground black pepper<br />
2 tablespoons unsalted butter<br />
4 teaspoons minced garlic<br />
1 tablespoon lemon juice<br />
1/4 cup dry white wine<br />
1/4 teaspoon grated lemon zest<br />
2 teaspoons  chopped flat leaf parsley leaves</p>
<ul>
<li>Completely dry the shrimp with a paper towel.</li>
<li>Heat a large skillet over medium heat. Season the shrimp with salt and pepper. Melt the butter to the skillet. Cook the shrimp for 1 minute. Add the garlic and cook for 1 more minute. Turn the shrimp over and cook for 2 minutes more. Transfer the shrimp to a bowl.</li>
<li>Return the skillet to the heat and pour in the white wine and lemon juice. Cook until slightly thickeneda around 30 seconds. Scrape up the bits from the bottom of the pan with a wooden spoon. Stir in the lemon zest and the parsley into the sauce. Pour the sauce over the shrimp and toss to combine.</li>
<li>Serve over your favorite pasta and enjoy!</li>

				<content:encoded><![CDATA[<p>I first saw this recipe on &#8220;Food Wishes.&#8221;  I made it and it was really simple and tasted good.  This time when I made it I added some more spices and put a little bit more effort into it.  This is what I did:</p>

<p><span style="text-decoration: underline;"><em><strong>Easy Chicken Parmesan</strong><strong> Casserole</strong><strong><br />
</strong></em></span>1 lb chicken breasts, cut into bite sized pieces<br />
2 tbsp olive oil<br />
2 cloves garlic, chopped<br />
1 tsp crushed red pepper<br />
2 cups spaghetti sauce<br />
8 oz mozzarella<br />
4 oz parmesan<br />
1 bag crouton, 5 oz<br />
spices, to your liking</p>
<ul>
<li>Preheat oven to 35o degrees.</li>
<li>Spread olive oil, garlic, and red pepper flakes in a 9 x 13 inch glass baking dish.</li>
<li>Season cut up chicken breasts with spices that you like.  I used salt, pepper, garlic powder, and italian seasoning.  Brown pieces in hot skillet.</li>
<li>Add chicken to bottom of glass baking dish.  Pour spaghetti sauce over chicken.  Add half of the cheese over the sauce.  Add the croutons evenly over the cheese and sauce.  Top with remaining cheese.</li>
<li>Bake in preheated oven for about 35 minutes, or until cheese starts to brown.  Let rest for 5 to 10 minutes, or as long as you can wait.</li>
</ul>
<p>You can enjoy this just as it is.  I served mine with some thin spaghetti noodles tossed with a little bit of sauce.  I also made some garlic bread.  This is a pretty simple dish that is very flavorful as well.  It is a nice spin on the classic Chicken Parmesan and I hope you enjoy it as much as I did.</p>

<h1>Copy Cat Recipe: Tomato&#8217;s Bacon Spezie<br />

<p style="text-align: justify;">When I am in the small town of Twin Falls, Idaho I have to go to Tomato&#8217;s Bar and Grill and get their Bacon Spezie. It is a spicy, cajun inspired alfredo with bacon, chicken and mushrooms. I serious will ruin my entire diet for this dish, it&#8217;s sooo amazing.</p>
<p>I was craving this dish at home in Alabama and decided to google it, it is original, like no one, not even the internet has this recipe except for a small restaurant in small Twin Falls, Idaho. At least they got that going for them. But I NEEDed it! So I tried a recipe and failed and tried again and vola! It is perfect.</p>
<p>Here is my gift to you internet world! And everyone who has been wanting this recipe for the home.</p>

<p style="text-align: center;"> Ingredients:</p>
<ul>
<li>2 chicken breasts</li>
<li>5 slices of bacon</li>
<li>1 cup heavy cream</li>
<li>1 1/2 cups italian blend shredded cheese</li>
<li>1/2 chicken broth or more for thinning</li>
<li>2 TBSP butter</li>
<li>8 white mushrooms, washed and sliced</li>
<li>3 to 4 green onions</li>
<li>1 TBSP minced garlic</li>
<li>cajun spice mix ( 1 tsp salt, 1 tsp garlic powder, 1 tsp paprika, 1/4 tsp black pepper, 1/4 tsp cayenne pepper, 1/2 tsp dried oregano, 1/2 dried thyme) This is approximately how much I used.</li>
</ul>
<p style="text-align: center;">Directions:</p>
<p>Start by slicing chicken in thin slices and cutting bacon into 1 inch pieces. Fry together, on medium-high heat for 4 to 5 minutes. Season with cajun seasoning. Add garlic, mushrooms and butter. Once the mushrooms, chicken and bacon are golden, (in bacon case crisp) turn down the heat to a simmer and add cream, chicken broth and green onion. When simmering add cheese and let melt. Adjust any seasoning to taste and enjoy. Serve over penne.</p>
<p>Tomato&#8217;s does melt a smoked gouda over the top under the heat of an oven. Although really tasty, I chose to leave this step out because I don&#8217;t have any gouda and I don&#8217;t need the calories <img src='http://www.whatiscookingnow.com/wp-includes/images/smilies/icon_wink.gif' alt=';-)' class='wp-smiley' />  I hope you enjoy this dish, it&#8217;s is seriously delicious.</p>

<li>Put everything in a blender and blend until well mixed.&nbsp; This tastes much better after sitting in the fridge overnight.&nbsp; Don&#8217;t be disappointed with the white color of the dressing.</li>
<li>Serve with lettuce and your favorite veggies.&nbsp; I had onions, tomatoes, and banana peppers.&nbsp; And croutons and Parmesan.</li>

<li>On lightly floured surface, roll out to desired thickness and cut or <em>use a pasta roller.</em></li>
<li>Add to large pot of boiling water and cook until tender, just a few mintues.</li>

<p><strong><em><u>Steak and Gorgonzola Pasta</u></em></strong>

<p>Steak Gorgonzola Alfredo<br />Serves 4<br />Cook time <span style="font-family: Times, &quot;Times New Roman&quot;, serif;">10 minutes</span> (depending on  doneness of steak)<br />Prep time 30 minutes </p>
<p>Ingredients </p>
<p>Marinated steak 2.5 pounds<br />Pasta uncooked 1  pound<br />Spinach Gorgonzola sauce 16 fl oz<br />Gorgonzola cheese 2  tablespoons<br />Chopped sun dried tomatoes 2 tablespoons<br />Balsamic glaze 2  tablespoons </p>
<p>Procedures </p>
<p>Steak<br />1 boneless top sirloin 2.5  pounds<br />1.5 cups Italian dressing<br />1 tablespoon chopped fresh rosemary<br />1  tablespoon fresh lemon juice </p>
<p>1. Cut beef into 1 inch cubes and set  aside<br />2. mix the dressing, rosemary and lemon juice together<br />3. Add the  marinade to the beef toss and let marinate for at least 1 hour. </p>
<p>Spinach  Gorgonzola Sauce<br />16 fl oz Alfredo sauce(see below)<br />4 cups chopped spinach<br />½ cup  chopped green onion<br />3 tablespoons Gorgonzola cheese crumbled </p>
<p>1. Heat  Alfredo sauce in a large&nbsp;saute pan<br />2. add onion, spinach and Gorgonzola  cheese </p>
<p>To put the dish together:<br />Grill steak to preferred  doneness<br />Cook 1 pound pasta according to the directions<br />Place drained  pasta in&nbsp;saute pan with heated sauce<br />Toss pasta with sauce and place on a  large platter<br />Place grilled beef on pasta and sauce<br />Drizzle with balsamic  glaze<br />Sprinkle remaining Gorgonzola cheese and sun dried tomatoes</p>

<li class="recipe_size_2" style="display: none;">12 egg yolks from fresh jumbo eggs</li>

<li class="recipe_size_3" style="display: none;">4 1/2 cups milk</li>
<li class="recipe_size_3" style="display: none;">4 1/2 cups heavy cream</li>
<li class="recipe_size_3" style="display: none;">1 1/2 cup imported Parmesan cheese, grated</li>
<li class="recipe_size_3" style="display: none;">1 1/2 cup imported Romano cheese, grated</li>
<li class="recipe_size_3" style="display: none;">18 egg yolks from fresh jumbo eggs</li>
<li class="recipe_size_3" style="display: none;">Salt and black pepper to taste</li>
</ol>
<h3>Procedures</h3>

<li><strong>HEAT</strong> milk and cream in a heavy bottom saucepan until it begins to simmer. Turn off heat. Slowly whip in cheese, then remove from heat.</li>
<li><strong>PLACE</strong> egg yolks in a separate bowl and slowly whip in a portion of the hot milk and cream mixture. Slowly add egg yolk mixture back into remaining cream mixture. Place back on very low heat and continually stir until simmering. Take sauce off heat so it thickens. (This will increase temperature of egg yolks, known as tempering).</li>
<li><strong>SEASON</strong> to taste with salt and black pepper. Serve over your favorite pasta.</li>

<div>1 family size can cream of mushroom soup </div>

<div>I used Campbell&#8217;s cream of mushroom soup and Daisy light sour cream</div>

<div>1. Brown ground beef in a large skillet.</div>
<div>2. Stir in sauce mix, water, and cream of mushroom soup</div>
<div>3. Bring to a boil; cover. Reduce heat and simmer 10 minutes, stirring occasionally. Remove from heat; stir in sour cream. Serve over rice or noodles.</div>

<div>By adding the cream of mushroom soup the stroganoff becomes nice and creamy. It also helps to thicken up the sauce. You can tweak this recipe by adding 2 tbsp. white wine and 1 (8 oz.) pkg. of fresh sliced mushrooms.</div>
