Big Easy Sloppy Joes

2 lb grass-fed ground beef
1 tablespoon coconut oil
1 large onion, chopped
1 red bell pepper, seeded and chopped
1 (6-oz) can tomato paste
½ cup organic chicken broth
1 teaspoon apple cider vinegar
1 tablespoon Cajun seasoning
1 head Bibb or butter lettuce, leaves separated

  • Cook ground beef in a large nonstick skillet over medium heat 8 minutes or until browned; drain and set aside.
  • Melt oil in skillet; add onion and bell pepper. Cook 5 minutes or until onion is tender.
  • Stir in tomato paste, chicken broth, vinegar and Cajun seasoning.
  • Return beef to skillet, and cook 10 minutes or until sauce thickens.
  • Spoon beef mixture onto lettuce leaves; roll up.

Cajun Zucchini Fries

5 medium zucchini
2 egg whites
1 cup almond flour
1 tablespoon Cajun seasoning
½ teaspoon salt

  • Preheat oven to 425°F. Cut zucchini into 3- inch sticks.
  • Whisk together egg whites and 3 tablespoons water.  Combine almond flour and Cajun seasoning.
  • Dip zucchini in egg mixture; coat in flour mixture.
  • Place zucchini on a baking sheet rubbed with coconut oil.
  • Bake 25 minutes or until browned and crisp; sprinkle with salt while warm.
